Under the new law, trans fats, long linked to health problems, must be excised from restaurant products beginning in 2010, and from all retail baked goods by 2011. We now know how dangerous this crap is, why extend the deadline until 2010 and 2011, why not say EFFECTIVE IMMEDIATELY instead and publish it so people will know......Most of us know why but it just floors me to see how big bro likes to control and dictate.....Oh well better days ahead... Crisco and Parkay brand margarine was heavily marketed in the 1980s as a substitute for Lard and butter.

However, Lard is actually better for your body than a Transfat alternative. So is butter. I found out how bad Transfats were when I actually read a colleague's lecture about it. His background is molecular biology, and he said it so forcefully that I believed what he was talking about.

Since the MSG scare, I've fallen in love with Utah's indigenous cooking. You can control what you put in your cooking when you use recipes that existed before processed foods. Roast Wild Duck, homemade Beef Stew, homemade pie crust . . . hmmm!

re: California Bans Restaurant Trans Fats

There is one "food" that is absolutely forbidden in my household. That is margarine (and Crisco). If it somehow makes its way in there via a guest, whoever was the perpetrator will get the lecture. I have no hesitation to let someone know exactly what that stuff is and does to the body. The margarine will also be properly disposed of as the toxic waste it truly is.

There are still surprised people who visit my place and are stunned to find out there's no margarine. When they ask, I offer them a choice of premium fats: grassfed butter, virgin coconut oil, extra virgin olive oil. Once they decide to taste any of those, they begin to understand why my family's cooking tastes very different, and generally more satisfying.

As to this law, I have mixed feelings. The government telling us what to eat again does not sit well, but there are so many people who do not focus on the effect their food has on their bodies (ultimately emotions, personal relationships, etc.) it is astounding. Due to the health hazard that this toxic sludge really is, I have to say that, over my own usual objections, in the end I agree with the objectives.

Papa Lee
