Here's a great recipe for protein types. Perfect for a brunch crowd!
Ingredients:
- 1 bunch fresh organic spinach, chopped
- 3 cups mushrooms, chopped
- 4 oz. raw cheese, grated
- 10 to 12 organic eggs
- ½ cup organic cream (I use raw cream)
- Salt & pepper
- 1 heaping teaspoon prepared mustard
- ½ stick (2 oz) butter, melted
Preparation:
- Preheat oven to 350° F.
- Place spinach evenly in greased, 9x13 glass baking dish.
- Spread mushrooms evenly over spinach.
- In med-sized bowl, break 10-12 eggs.
- Add melted butter, raw cream and mustard.
- Add black pepper, good sprinkling, about ¼ tsp. (more if you like)
- Add dash of salt. (Himalayan Salt is great) (adjust salt to preference)
- Whiz using immersion blender or hand whisk.
- Pour egg mixture evenly over spinach and mushrooms.
- Sprinkle grated cheese evenly over top.
- Cover dish with foil.
- Bake at 350° F. for 35-40 min.
May serve with salad, cole slaw or however you like.
