</description></item><item><title>re: How to Get and Stay Healthy</title><link>https://blogs.mercola.com:443/sites/vitalvotes/archive/2020/12/20/how-to-get-and-stay-healthy.aspx?ShowAllComments=True#1047514</link><pubDate>12/21/2020 4:48:57 PM</pubDate><guid isPermaLink="false">24451277-a5aa-4add-96dc-64081bfd86fa:1047514</guid><dc:creator>Almond</dc:creator><description>&lt;p&gt;Many people will be wanting coarser food after rich foods for holiday meals.   &amp;nbsp;I grow my own heirloom corn flour.   I will include a recipe for my simplest corn pone.  Good with greens and beans.  Or, with stew.  if you make stew, add a &amp;quot;glug&amp;quot; of wine!  ; - ) You can use 2 forms of most grains (coarse grind and flour)--use the same kind of grain--or all coarsely-ground cornmeal and finer corn flour.  You could use oatmeal and oat flour, too, for example.  Prob not rice, though, unless you knead it, like for days, to make mochi.  I will write this up as a standard recipe using aluminum-free baking powder.  If you know how to substitute, please feel free to do so.  This is a very forgiving dump-and-pour recipe.&lt;/p&gt;
&lt;p&gt;Start with some leftover cornmeal mush.  You want it fairly stiff.  Add corn flour of any sort or color until it is stiff enough to form a dough.  Add 1 t. of baking powder for each cup of dough (optional, but suggested).  Just guess.  Add a bit of honey, stevia or other sweetener (optional). Add salt, to taste (optional).  If you are making a large batch, add an egg to the cooled cornmeal mush before adding flour and other ingredients.  &lt;/p&gt;
&lt;p&gt;Butter a nonstick or well-seasoned skillet and sprinkle with cornmeal or coarse grain to prevent sticking and scorching.  Shape dough like small ears of corn (cornpones), flatten slightly and lay in pan or on prepared cookie sheet.  Bake until done.  Temperature is not crucial. 350F the entire time or start higher (425?) for a few minutes before reducing heat to 350F. Delicious served hot with honey, honey-butter or wild berry jam/jelly.  Good plain, too. Hoe cakes were made in the field and cooked over an open fire on the end of a hoe.  Flatter cooks faster.  Just cornmeal and water. &amp;nbsp;This is a very old colonial recipe from the 1700&amp;#39;s.  A recipe that keeps giving is a precious gift to be passed on and passed down thru generations.  I consider a cookbook a good investment when I use even a few recipes frequently.&lt;/p&gt;
