I did not mention the process of hydrogenation, but did mention that before the hydrogenated oils and margarines were introduced to the US food supply in 1911 deaths from heart attack were under 10% but increased significantly thereafter.&lt;/p&gt;
&lt;p&gt;Consumption of saturated fats from butter and coconut oil &amp;nbsp;fell as the &amp;nbsp;new &amp;#39;heart healthy &amp;#39;oils were promoted and saturated fats were vilified.&lt;/p&gt;
&lt;p&gt;I said that we had obviously taken a wrong step - and IF saturated fats should be minimised it may have made more sense to use olive oil rather than omega  6 oil.&lt;/p&gt;
&lt;p&gt;I do not believe saturated &amp;nbsp;fats cause illness - unless they in products from CAFO animals.&lt;/p&gt;
