&lt;p&gt;Nitrate in high dose is dangerous, it cause cattle poisoning, yet in small amount it is beneficial since nitrate is converted to nitrite, then nitric oxide which is an iron chelator. This is why drugs like nitroglycerin (metabolized in the liver to glycerol and nitrate) is used against angina. Less free iron in the arteries means less atherosclerosis. L-arginine is another source of nitric oxide.&lt;/p&gt;
