The Environmental, Biochemical and Nutritional Analytical-Control Research Group has used advanced analytical techniques to precisely study the antioxidant properties of olive oil.
They found that olive oil rich in naturally antioxidant polyphenols is highly beneficial in preventing cell aging, osteoporosis, and cancer. Samples from 15 different olive oil mills were all found to be very rich in polyphenols.
