Breadmakers Hold Crisis Talks Over Impact of Atkins Diet

This is a follow-up from my posting on bread earlier this month. Consumption of bread plummeted in America in the past year. A study by the National Bread Leadership Council estimated that 40 percent of Americans are eating less bread than in 2002. The average American eats 54 pounds of bread a year, barely a third of the quantity consumed by the French and Italians. Interstate Bakeries of Kansas City, Mo., the largest wholesale baking company in the United States, told Wall Street last month that unit sales of its branded bread products in the latest quarter were down 7.2 percent.
