Scientists Genetically Modify Chickens to Reduce Egg Allergies

Researchers have genetically modified chickens to produce eggs lacking a protein known to cause egg allergies in humans.

While the chickens aren’t ready for release on the market yet, initial findings so far are that the resultant eggs are safe for use in both foods and vaccines. The Japanese researchers said continued studies are necessary before they can declare the eggs completely safe.

“The next phase of research will be to evaluate the physical properties and processing suitability of OVM-knockout eggs, and to confirm their efficacy through clinical trials,” Ryo Ezaki, assistant professor at Hiroshima University, said. “We will continue to conduct further research toward the practical application of allergy-reduced eggs.”
