Researchers found that inulin, a natural fiber found in foods like garlic, onions, and artichokes, helps gut bacteria process fructose before it reaches the liver. Published in Nature Metabolism, the study showed that fiber-fed microbes can “burn through” fructose and even reverse early signs of fatty liver disease. “Our findings show how fiber protects our health from harmful nutrients like fructose,” said lead author Cholsoon Jang, Ph.D., from UCI’s Nutrient Metabolism & Disease Lab.

The discovery suggests that even people at a healthy weight can experience liver stress from high-sugar diets if their gut bacteria aren’t equipped to handle fructose. Experts say the findings could guide new nutrition and prebiotic strategies to help prevent conditions such as fatty liver disease, diabetes, and obesity — proving that fiber does far more than keep digestion on track.
